As fish populations decline in the Mediterranean and the oceans, aquaculturists are gradually replacing fishermen. The Provence-Alpes-Côte d'Azur region, with a dozen farms that have appeared since the end of the 1980s, has become home to the largest concentration of open sea fish farms in France. For all these sea farmers, the focus is food. The future may well be driven by further research on algae, a substitute for animal feed.
